In the manufacturing process of ice cream, flavors, sugar, or sugar supplements in powder form get added into milk or water and are cooled below the freezing point. These flavors, stabilizers, thickeners, and sweeteners are often a powder mix and created on a high-intensive mixer/blender. Sometimes liquid flavors need to be added to the powder mix that makes the mixing operation even more complex and detailed. The picture shows a Ploughshare mixer for soft served ice cream powder. It has a working capacity of 74 cu ft, and is made of stainless steel 304 with an internal food style finishing in grit 240. The machine has several liquid injection ports as well as six high-speed choppers to destroy agglomerations and dissolve color pigments. Gisbert WAM Inc.
