Blommer Chocolate Unveils New R&D Lab in Chicago

The location includes a humidity-controlled kitchen for chocolate and compound work and a kitchen for hot applications like frying.

Cocoa processor and ingredient chocolate supplier Blommer Chocolate Co. opened a new R&D Applications in The Merchandise Mart in downtown Chicago, expanding the firm's development capabilities, a recent company release announced.

“We are looking forward to hosting customers! The new lab has been thoughtfully designed to be a functional workspace for the team with a welcoming atmosphere for collaborating with customers,” Marie Loewen, R&D corporate manager, Applications for Blommer, said in a statement.

The facility features a humidity-controlled kitchen for chocolate and compound work that opens into a large room used for training, ideation, and demonstrations. Another kitchen on site is used for “hot” applications including baking and frying.

Blommer’s R&D Applications team will staff the new location. The company will begin hosting customers at the Chicago site this month.
