A prominent North American importer of fine cheeses uses state-of-the-art machinery in its 74,000-sq-ft processing facility. Shredded cheeses are processed using four linear scales and released in 5-lb increments that pass through Lock’s Insight Waferthin metal detector before entering a multi-pouch bagging system.

At 4.5 x 8 in., the system mounts between the linear scales and the bagger. Because the company can now inspect smaller portions, the cheeses are less dense falling through the aperture so there is less product effect. Cheese is conductive and has different moisture levels that can affect sensitivity.

As an additional bonus, Insight Waferthin’s reject system is integrated with the bagger. In the event a contaminant is detected an output signal from the Insight Waferthin communicates with the bagger to skip a seal, creating a double bag. The Insight Waferthin helped the company achieve SQF 2000 Level II certification.
